(Odograph - n. an instrument recording distance traveled, especially by a pedestrian.)
This recipe (or close to it) came with my first DAK bread machine. It's an old favorite.
As always, the water should be lukewarm, and all other ingredients should be at room temperature.
Dust out your bread pan and add the following (I don't think order matters, but some manufacturers recommend "yeast first" or "yeast last" order. I use "yeast first".):
1 scant tablespoon instant yeast
3 cups high gluten flour
1 cup rolled oats
1 cup lukewarm water
2 tablespoon canola oil
1 1/4 teaspoon salt
Here's where it gets tricky. Add in:
1/4 cup liquid #1
1/3 cup liquid #2
As I first received the recipe, "liquid #1" was water (for a total of 1 1/4 cups) and "liquid #2" was maple syrup. That made a good bread, but a bit too sweet for me, so i switched them to 1 1/3 cups water and 1/4 cup maple syrup. That suits me better.
When I don't have maple syrup, I just use 1 + 1/4 + 1/3 cups water and 2 tablespoons brown sugar.
You get the idea. As long as the liquids add up to that total, and their temperature is lukewarm, it will be fine.
Press start, wait for bread .. then slice, toast, consume.
