Nine-Grain Bread

This recipe starts with boiling water, and you must let the first mixture cool to lukewarm before continuing. Remember, temperature errors are the most common problem in bread machine baking.

Start by pouring 1 cup boiling water into a safe container. Pour into that 1/4 cup nine-grain cereal.

Mix it or not, whatever.

Now is the time to go do something else, and not worry, until the nine-grain glop is lukewarm. Then ...

Dust out your bread pan and add the following (I don't think order matters, but some manufacturers recommend "yeast first" or "yeast last" order. I use "yeast first".):

1 scant tablespoon instant yeast

3 cups high gluten flour

the "nine-grain glop" from the step above

1/4 cup lukewarm water

1 tablespoon canola oil

1 tablespoon honey (or brown sugar)

1 1/4 teaspoon salt

and unless I have some good reason not to, I add:

1/4 cup raw sunflower seeds

Press start, wait for bread .. then slice, toast, consume.
